Uncommon Bee Farm

Uncommon Bee Farm is a Texas-based apiary founded by beekeeper Kenneth Coleman. What began with collecting a stray swarm of honeybees developed into a business specializing in raw honey, infused varieties, and unconventional honey preparations.

Coleman's interest in beekeeping began during childhood summers in North Carolina, where he worked alongside local beekeepers near his grandfather's home. Years later, an opportunity to recover a swarm rekindled that interest and eventually led to the establishment of Uncommon Bee Farm.

The company's approach begins with the health of its colonies. Rather than maximizing honey production, Coleman emphasizes maintaining healthy hives and harvesting only what the bees can spare.

Uncommon Bee Farm is particularly known for its extensive collection of infused honeys. Alongside traditional honey, the company experiments with ingredients such as hibiscus, ginger, garlic, lavender, peppers, and tea. Its more unusual preparations include barrel-aged honey, combining the familiar sweetness of honey with flavors associated with the aging process.

The resulting collection moves comfortably between sweet and savory cooking, with honeys suited to tea, cheese, baking, marinades, and finishing dishes.
