Sourwood honey has a quiet, layered sweetness: caramel and maple at first, then warm clove and anise, with a smooth, buttery finish. Despite its name, the honey isn’t sour. Its flavor comes from bees gathering nectar from sourwood trees, whose fragrant white blossoms open for a brief stretch of the North Georgia summer.

Built by Bees sources this honey from a small group of private Appalachian apiaries, including a beekeeper whose honeys have earned four world championship titles. Sourwood’s short, weather-sensitive bloom makes each harvest a snapshot of a particular season in the mountains. This single-flower honey is also prized for crystallizing more slowly than many other varieties.
