Barnacle Foods Alaskan Rhubarb Jam

Rhubarb is one of Alaska’s old garden staples. It thrives in the cool, rain-soaked conditions of the south, where short growing seasons and generous rain suit its tart, vivid stalks.

Barnacle Foods grew from a similar affection for the foods of home. Juneau-born founders Matt and Lia began filling their cupboards with preserved coastal ingredients and recipes; they now make their products in Juneau, sharing a taste of Alaska beyond the coast.

This jam lets the fruit lead: bright, tart rhubarb with enough sweetness to make it spreadable, while keeping its distinctive tang. Try it on buttered toast, spoon it over vanilla ice cream, or brush it onto salmon before baking for a sweet-tart glaze.
