Barnacle Foods Alaskan Spruce Tip Jelly

Each spring, the coastal rainforests of Southeast Alaska put out fresh Sitka spruce tips: tender green buds with a bright, citrus-like aroma. Barnacle Foods gathers them by hand along Alaska’s wild coast and steeps them into a clear, golden jelly that tastes of the season—sweet, delicate, and fresh, without a heavy pine flavor.

Barnacle Foods began in Juneau, where founders Matt and Lia found themselves filling their cupboards with jars of preserved foods from the coast. Their work is still rooted there: the company makes its products in Alaska and draws on ingredients that reflect the place they call home.

Spread the jelly on buttered toast, serve it with a young cheese, or stir a spoonful into a cocktail. It also makes a distinctive filling for thumbprint cookies.
